    Warm
    Combine lemon juice, sugar, ginger, and half the champagne vinegar. Warm until sugar dissolves.

    Steep
    Off heat, steep 30 min.
  3. 03
    Strain & finish
    Strain out ginger. Add remaining champagne vinegar. Bottle and refrigerate.
