Hot-process. Deep jewel-toned. Rosemary adds resinous savory lift. Whiskey and gin. 3 month fridge life.

Grapefruit Thyme Shrub

Hot-process. Bitter grapefruit with herbal thyme — the bitterness is a feature. Gin, tequila, and IPA cocktails.

Lemon Ginger Shrub

Hot-process. Bright lemon with ginger punch. Gin, vodka, and whiskey. Superb in sparkling water.

Lime Coconut Shrub

Cold-process. Tropical and tangy. Coconut vinegar is mellow — rice wine vinegar works as a substitute. Rum and tequila.

Rich Simple Syrup (2:1)

2:1 ratio. Thicker body, longer shelf life. Use half the volume of 1:1. 4+ week fridge life.

Demerara Syrup (2:1)

2:1 demerara. Adds toffee and molasses depth. Excellent with rum, whiskey, and mezcal.
