How to make it

    Optional rim
    Salt the rim of a chilled highball — flaky sea salt, not table.

    Build in the glass
    Add 2 oz blanco tequila, 2 oz fresh grapefruit juice, 0.5 oz fresh lime, 0.25 oz simple syrup. Fill with cubes.

    Stir gently
    Stir 2–3 turns with a long bar spoon to combine without flattening.
  4. 04
    Top with soda
    Pour 2 oz chilled soda water down the back of the spoon to preserve the fizz.
  5. 05
    Garnish
    Float a grapefruit wedge on the rim.
