    Chill the rocks glass
    Pack a rocks glass with ice while you build.

    Combine and stir
    2 oz rye, 0.25 oz demerara syrup (2:1), 3 dashes Peychaud's, 1 dash Angostura in a mixing glass with ice. Stir 25 seconds.

    Rinse
    Discard the ice from the rocks glass and coat the interior with absinthe. Pour off any excess.
  4. 04
    Strain
    Into the absinthe-rinsed glass, no ice.
  5. 05
    Garnish
    Express a lemon peel over the surface and discard.
